Asma Haidara: Baajiya (Black-Eyed Fritters)

BAAJIYA (Black-Eyed Fritters)
Ingredients:
2 cups Black-eyed beans, soaked overnight and drained
1 onion, chopped
2 cloves of garlic, chopped
1 tablespoon cilantro, chopped
1 teaspoon salt
1 teaspoon coriander powder
1 teaspoon cumin powder
1 green chili, chopped optional

Instructions:
Put all the ingredients in a food processor and pulse in to a paste or place them mortal and pestle in batches and and grind them in to a paste.
If you have time let them sit in the fridge for 2 hours.
Heat the oil in a pan on medium heat and fry spoonfuls of the mixture until golden brown.
Serve with green chilli sauce or what ever sauce you like.

BASBAAS SAUCE or BAAJIYA SAUCE
Ingredients:
5 jalapenos or serrano/seeds removed
1 juice of a lemon
Water
Salt

Put all the ingredient in a blender and process it until smooth. Dip with the baajiya
